Angela Montero Diaz Interview

Last week I told you about one of the hottest tables in the world, the Michelin two-star restaurant, DiverXO in Madrid. Without a doubt, everything you’ve heard is true, David Muñoz is a brilliant chef and every morsel that he puts on a plate is truly memorable, but he’s only half the story.

Behind every superstar chef, there is an even greater woman. The one who is his #1 taste-tester, who tolerates the long hours and who often manages the growing culinary empire, so that he can focus exclusively on food.

America’s chef royalty Thomas Keller has Laura Cunningham and Spain’s David Muñoz has ANGELA MONTERO DIAZ.

Angela is David’s wife, business partner and chief overseer of the incredible spectacle that is DiverXO. What I noticed immediately was Angela’s energy, coolness under pressure, her style and her hundred watt smile.

As I’ve gotten to know Angela, I admire how smart, self-assured, funny and forward thinking she is and I know you will too.


You are the managing partner of one of the world’s hottest tables, DiverXO, how did you get started?
David and I met in 2002. David dreamed of opening his own restaurant and I was a professional dancer. In 2007, we returned to Madrid after a long stay in London and opened DiverXO to fulfill a dream. I continued dancing, but soon realized that I had to focus on our business, so I left professional dancing and began managing DiverXO. It is something that I love and I learn everyday.

Do you and David have a brand philosophy or goal?
Well, David is not only my partner, but my husband, so DiverXO is certainly a philosophy of life because our life is DiverXO. DiverXO must always propose a unique dining experience and the food and service is becoming more personal and we work hard to ensure this, that is our philosophy. Today, our goal is to work, work, work and make DiverXO increasingly personal and if we have a good chance to go to another city, the three of us…David, DiverXO and me, well…and my dog, Dumpling too that would be fantastic.

Where did the name DiverXO come from?
In Spanish “different” with an “s” means “diverse” in English. A diversity of ingredients, flavors, sensations and smells. We changed the “s” to “x” to refer to the Hong Kong XO sauce. When David discovered it, it was a great surprise and served as a great inspiration.

What is the best aspect of managing a Michelin star restaurant?
The best aspect is managing a level that reaches the highest perfection every day. We work to make every day better and to not stop creating, innovating, and thinking. In fact, creation and perfection are innate qualities in the personalities of David and me, and DiverXO is the result.

Working with an incredibly innovative artist/chef, do you ever contribute ideas to the tasting menu?
Working with David is simply amazing. His level of creativity, talent and passion for what he does is overwhelming! We are a team in everything, we always decide everything together, we travel together. But I see my job as more of a support to him. Of course I bring ideas, but most often I help mold them.

Your staff is well-informed and efficient, what’s the training process like?
In a restaurant as personal as DiverXO that is the hardest part. We have many meetings to explain and help the staff understand what is being served at DiverXO. It is essential that our staff know what we are serving and if they have questions to ask. It is a daily and constant work.

When we visited, we didn’t leave until well after 1am, so I’m wondering, what is a typical day like for you?
I laugh just thinking about it! I arrive at work around 11am, the lunch service begins at 2pm and ends at 5:30pm or 6pm. In the evenings, I’m back at 8pm, there are days during my break I go home to rest, other days I go shopping and some where I teach my students ballet or pilates. The evening service begins at 9pm, so I usually close the restaurant at 2am. Such is life in the hospitality industry…

I was so impressed…how do you remain so bubbly and cool under pressure?
Yes, so am I! The few times that the pressure has gotten to me, I considered it a complete waste of time. I like to have everything under control and I almost always succeed, if I fail and do get angry, I do it always, always with a smile or I do a little bubbly dance!

With such long work days, how do you create balance in your life?
For me, it is very important to not separate myself from dance, so I teach and study dance. Family is also important, my relationship with my parents and brother is perfect and I do not allow the fact that I have little free time to be an excuse not to speak to them. And I make the most of my days off with David to talk and have fun.

Do you and David entertain at home?
David and I are very active, when we have free time, we like walking around the city, going to movies, exploring other restaurants or shopping. If we stay at home it is to watch a great movie, or Formula 1, tennis or the NBA.

Do you like to cook? If so, what’s your signature dish?
The truth? I do not cook anything! The best thing for me was meeting David. But I do like to cook and when I do, it’s great. My signature dish would be Huevos Fritos y Patatas Fritas (fried eggs and chips).

When you eat out in Madrid, where do you go?
On Sundays I love going to Filandón in El Pardo, its incredible and feels like home. On Mondays, I enjoy going to Sudestada and I have a fondness for Sacha and my birthday is always held at Kabuki Wellington.

What do you love most about living in Madrid?
I love to see that Madrid is increasingly cosmopolitan and I hope this is not compromised by the current crisis. There are always interesting things happening and the city has grown so much since we moved back from London in 2007. And I love the weather. I love Madrid in the winter and summer.

Angela, tell us about your personal style.
My personal style is all about ease, simplicity and elegance. I do not like bright colors. I like to be comfortable every day, I love when clothes and accessories are not severely strained. I now love wearing my hair short, I think it looks better than long. I love make up, especially on my eyes because it gives me personality. I love painting my nails and I love having so many sunglasses!

Who are your style icons?
I’ve never really thought about it, but there are only three people who have inspired me in terms of fashion and all three are English….Kate Moss, Amy Winehouse and Victoria Beckham. Kate is a natural and I appreciate the beauty in her naturalness. Amy had an incredible talent and I loved her make-up, mini-dresses and ballet flats! And Victoria changes things up alot, but is always elegant and simple at the same time.

What are your must-have beauty essentials?
I could not leave home without painting my nails or my Paul Smith Rose perfume and in order of importance: mascara, eye liner and lip gloss.

Describe one unforgettable place you’ve traveled too.
I’ve traveled to many parts of Asia that excited me, Rome is incredible and London is magical and memorable for me, even with so many people, every time I go I feel at home. Not even London weather bothers me.

Name one place you’d like to see before you die.
I would love to visit Jamaica and I’m drawn to Iceland as well.

Music is such a defining element in people’s lives, what song takes you some place special whenever you hear it?
I could say a thousand songs that remind me of the time when I danced professionally, but I’ll just name three…You Never Can Tell, from the twist scene in Pulp Fiction, because I danced to it with my father at my wedding, Gentlemen’s Agreement by Joaquin Sabina who my brother and I listened to and would sing like crazy on road trips with our parents. And there are actually two more songs that give me a very good feeling, Love, Love, Love and Broadens the Soul by Xtreme. Also I’m Yours by Jason Mraz and anything by Amy Winehouse.

What advice do you have for younger women?
Work hard because that is how you make your dreams come true, don’t be afraid to make tough decisions and take care of yourself inside and out.

La semana pasada, te dije acerca de una de las mejores mesas del mundo, el dos estrellas Michelin restaurante, DiverXo en Madrid. Sin lugar a dudas, todo lo que has oído es verdad, David Muñoz es un cocinero genial y cada bocado que se pone en un plato es verdaderamente memorable, pero eso es sólo la mitad de la historia.

Detrás de cada chef superestrella, hay una mujer mayor. El que está a su gusto º 1-tester, que tolera las largas horas y que a menudo maneja el creciente imperio culinario, para que pueda centrarse exclusivamente en los alimentos.

Cocinero de Estados Unidos libres de Thomas Keller tiene Laura Cunningham y David Muñoz de España tiene ANGELA MONTERO DIAZ.

Angela es la esposa de David, socio y supervisor jefe del increíble espectáculo que es DiverXO. Lo que noté de inmediato fue la energía de Angela, frialdad bajo presión, su estilo y su sonrisa de cien vatios.

Como he llegado a conocer a Angela, admiro lo inteligente, seguro de sí mismo, divertido y mirar hacia el futuro que es y sé que usted también lo hará.

Usted es el socio gerente de una de las más calientes del mundo Diverxo tablas, ¿cómo empezaste?
David y yo nos conocimos en el año 2002, el sueño de David era abrir su propio restaurante y yo era bailarina profesional. En el año 2007 regresamos a Madrid, despues de una larga estancia en Londres, y abrimos Diverxo para cumplir un sueño, yo continué bailando pero pronto me di cuenta de que lo que debía hacer era trabajar en mi propio negocio, asi que dejé la danza profesional y empecé a trabajar en Diverxo, en la sala y en la gestión. Es algo que me apasiona, aprendo cada día!

¿Usted y socio chef David Muñoz tiene una filosofía de la marca o el objetivo?Bueno, David no es sólo mi socio, es mi marido. Diverxo es sin duda una filosofía de vida, entendemos Diverxo como entendemos nuestra vida… Diverxo debe proponer siempre una experiencia gastronómica única, y sin duda lo consigue; la comida y el servicio de sala es cada día más personal y luchamos y trabajamos mucho para que así sea, esta es nuestra filosofía.

A día de hoy, nuestro objetivo es trabajar, trabajar y trabajar… Hacer Diverxo cada vez más personal y, si tenemos una buena oportunidad, irnos a otra ciudad los tres: David, Diverxo y yo!!! Bueno, y mi perro Dumpling.

¿Dónde está el Diverxo nombre?
En español “diverso” with s, quiere decir “diverse” en inglés. Diversidad de ingredientes, sabores, sensaciones, olores… Cambiamos la s por la x para hacer referencia a la salsa XO honkonesa. Cuando David la conoció fué una gran sorpresa y le sirvió de mucha inspiración.

¿Cuál es el mejor aspecto de la gestión de un restaurante con estrella Michelin?
El mejor aspecto de la gestión de un restaurante del nivel de Diverxo es alcanzar cada día la máxima perfección. Trabajar para que cada día sea mejor y no parar de crear, de inovar, de pensar… De hecho, la creación y la perfección, son cualidades innatas en la personalidad de David y en la mía, y Diverxo es el resultado de ello.

Trabajar con un artista tan increíblemente innovador / chef, ¿alguna vez aportar ideas para el menú de degustación?
Trabajar con David es sencillamente increible… Su nivel de creatividad, su talento, su pasión por lo que hace… es arrollador!!! Somos un equipo para todo, siempre decidimos todo juntos, viajamos juntos, etc. Mi trabajo en ese aspecto lo veo más como de apoyo. Por supuesto que aporto ideas pero lo más común esque ayude a moldearlas.

A su llegada al Diverxo, una araña que describe la experiencia que viene

Su personal es increíblemente bien informado y eficiente, lo que es el proceso de entrenamiento?
En un restaurante tan personal como Diverxo, esta quizá sea la parte más dificil. Hacemos muchas reuniones para explicar y entender lo que se sirve en Diverxo. Es esencial que el personal sepa lo que está sirviendo y si tiene alguna duda que lo pregunte. Es un trabajo diario y constante para el que no sirve todo el mundo.

Cuando nos fuimos, no salimos hasta después de la 1am, así que me pregunto, ¿qué es un día típico para usted?
Jajaja… Me rio sólo de pensarlo… Ok, entro a trabajar a alas 11:00am, el servicio de la mañana de Diverxo empieza a las 14:00pm y termina a las 17:30-18:00. Por la tarde vuelvo a las 20:00, hay días que durante mi descanso me voy a casa a descansar, otros que voy de compras y otros que doy clase a mis alumnas de ballet o voy a clases de pilates. El servicio de la noche empieza a las 21:00 y en mi caso, que cierro el restaurante, dura hasta las 2:00am. Asi es la hosteleria…

Yo estaba tan impresionado … ¿cómo seguir siéndolo burbujeante y la calma bajo presión?
Si, asi soy! Las pocas veces que la presión a podido conmigo lo he considerado una pérdida de tiempo… Desconcentrarse es lo peor que te puede pasar cuando estás bajo presión, cuando estas en un servicio en Diverxo o en una representación en un teatro… Me gusta tener siempre todo bajo control, casi siempre lo consigo, si no lo logro me enfado, pero siempre, siempre sonrio… Jajaja!!! Y creo que lo de bubbly se debe a la danza, creo que mi modo de caminar por la salsa da sensación de relajación…

Con un largo día de trabajo, ¿cómo crear un equilibrio en tu vida?
Para mi es muy importante no desligarme nunca de la danza, sigo enseñando y estudiando danza. Tambien es muy importante mi familia, mi relación con mis padres y mi hermano es perfecta, no dejo que tener poco tiempo libre sea una excusa para no vernos o para no hablar de nuestras cosas. Y por supuesto aprovechar al máximo los días libres con David, hablar y divertirnos…

¿Usted y entretener a David en su casa?
David y yo somos muy activos, no nos gusta quedarnos en casa cuando tenemos tiempo libre, siempre estamos en la calle paseando, en el cine, en restaurantes, de compras… Si nos quedamos en casa es porque tenemos una pelicula que ver, porque hay formula 1, tenis o NBA…

¿Te gusta cocinar? En caso afirmativo, ¿cuál es tu plato estrella?
La verdad? No cocino nada, lo mejor que me pudo pasar es conocer a David, jajaja!!! No me gusta cocinar y ahora no tengo que hacerlo, es genial!!! Aun asi, si tengo un plato estrella: huevos fritos con patatas fritas.

Cuando usted come en Madrid, ¿a dónde vas?
Los domingos me encanta ir a Filandón, en el Pardo,en Madrid; como increible y me siento como en casa. Y los lunes me hace disfrutar mucho ir a Sudestada, en la calle Ponzano, 85. Estos son los sitios que más frecuento. Tengo especial cariño a Sacha y mi cumpleaños siempre lo celebro en Kabuki Wellington.

¿Qué es lo que más te gusta de vivir en Madrid?
Me gusta ver que Madrid es cada vez más cosmopolita, espero que esto no se vea perjudicado por la actual crisis. Me gusta que es una ciudad en la que cada vez pasan más cosas interesantes y ha crecido mucho desde que yo volví de Londres en 2007. Me gusta que se celebre todo saliendo a la calle y me encanta el clima, me encanta Madrid en invierno y en verano.

Y ahora … Angela, nos hablan de su estilo personal.
Mi estilo personal es la naturalidad, sencillez y elegancia. No me gustan los colores muy vivos. A diario me gusta ir cómoda, no me gusta la ropa ni los accesorios muy recargados. Me encanta llevar el pelo corto, creo que me queda mejor que largo. Me apasiona arreglarme con sencillez. Me encanta maquillarme dando mucha personalidad a la pintura de los ojos y me encanta pintarme las uñas. Tengo muchisimas gafas de sol.

¿Quiénes son sus iconos de estilo?
Nunca me habia parado a pensarlo, pero solo hay tres personas que me han inspirado en cuanto a moda, y las tres son inglesas… Kate Moss, Amy Winehouse y Victoria Beckham, la primera es natural y se adapta a todo, es la belleza de la naturalidad. La segunda es una personalidad arrolladora, me encanta su maquillaje y sus mini vestidos, y sus zapatillas de ballet!!!. Y de la tercera me encantan sus cambios, su seguridad y que siempre va elegante y sencilla al mismo tiempo.

¿Cuáles son sus tres elementos esenciales que hay que han de belleza?
Yo podria salir de casa sin pintarme las uñas, incluso con el pelo mojado para que se me secase al aire libre o sin mi perfume Rose de Paul Smith, pero lo que siempre me pondría sería, por orden de importacia, rimmel, eye liner and lip gloss.

Describir un lugar inolvidable que ha viajado demasiado.
He viajado a muchas partes de Asia que me han entusiasmado, Roma me parece increible o mágica pero Londres es inolvidable para mi, aunque sea una ciudad enorme y con mucha gente, cada vez que voy me siento como en casa… Nisiquiera me molesta el clima…

¿Cuál es un lugar que le gustaría ver antes de morir.
Nunca me lo habia planteado… Me encantaría conocer Jamaica. No creo que mi trabajo me lleve nunca allí… Y sería un viaje que planificaría con mucha ilusión, me atrae… Islandia también sería una opción.

La música es un elemento definitorio en la vida de la gente, la canción que lleva algún lugar especial cada vez que lo oyes?
Podría decir mil canciones que me recuerdan a la época de cuando bailaba profesionalmente, no serían tres… jajaja! You Never Can Tell, el twist de Pulp Fiction, fué el baile de mi boda con mi padre. Pacto Entre Caballeros, un rock n´roll de Joaquin Sabina que escuchaba con mis padres y mi hermano en los viajes en coche y nos poníamos a chillar como locos. Y hay dos canciones que me producen muy buen rollo una es Ama, Ama, Ama y Ensancha el Alma (Versión 2004) de Extremoduro y otra es I´m yours de Jason Mraz. Y para mi, como Amy Winehouse no hay nadie…

¿Qué consejo le darías a las mujeres más jóvenes?
Les diría que trabajen mucho, que trabajando se cumplen todos los sueños, que no tengan miedo a tomar decisiones y que se cuiden mucho por dentro y por fuera.
