Eat the Season: Cabbage
More and more, I’m trying to eat seasonally. It’s incredibly tempting to eat my favorite fruits and vegetables all the time (asparagus in December? Why not!), but then I get bored and run out of creative ways to eat them, so I’m pledging to eat seasonally to mix things up and insure more food variety in my life.
One of my favorite vegetables: CABBAGE is a winter godsend. It’s easy to find, comes in several colorful varieties, can be eaten raw or cooked, and even organic versions are really inexpensive. Cabbage is also low in calories (1 cup=15 calories) and is filled with antioxidants, vitamins, minerals and even helps to keep your gut in check, so there’s good reason to try one of these easy recipes.
